Here is a great gluten free breakfast sandwich that is delicious. This recipe is one of my staples when I'm looking for a hearty (a.k.a. yummy, not healthy) breakfast. Today we will be working with Al Fresco's Apple Maple Chicken Sausage on an Udi's gluten free bagel and then topped with Cabot's Seriously Sharp Cheddar Cheese. Toast the bagel until it is slightly crispy and just starting to brown. (If it is frozen, microwave on high for about 30 seconds before toasting.) Set aside. Broil sausage until it is just starting to brown. Turn and repeat for other side. Closely monitor sausage while it is broiling, as it really starts to brown quickly once it gets hot. Remove sausage and cut links in half the long way. Careful... they will be hot and it's easy to cut your fingers if you try to cut them too quickly. Best to use both a fork and knife to avoid this. Place bagel on baking pan, place cut sausages flat side down and cover with cheddar cheese. Place under broiler until cheese begins to caramelize. Enjoy!
