Gluten is More Difficult to Digest Than Other Proteins

Gluten is not digested as well as other proteins. Most proteins are reduced to a one or two amino acids during digestion, while gluten is left a 33 amino acid peptide chain when it hits the small intestine. Researchers from Australia announced in 2010 that they found three fragments of the gluten protein that make it toxic to those with Celiac Disease.
